1 2 Step men 3 4 5 1. You like to stress bake and are notorious amongst your friends for your chocolate chip cookie cakes. Through word of mouth, your cookie cakes are now becoming a hot commodity at UT. You decided to start a side hustle selling your cookie cakes to hungry students during your free time. You are developing the process in your apartment in North Campus and expect high demand. Your initial batch size is 5 cookie cakes. Your demand rate is 7 cookie cakes/hr. Your process has 5 steps: 1. You start laying out all the ingredients on the table which takes 2 minutes and begin the process of measuring out the exact portion sizes of the ingredients. This step takes 30 seconds per cookie cake. 2. You make the cookie dough which takes 360 seconds per cookie cake processing time. 3. It is time to bake your cookies. You only have one oven. You ask your neighbor to borrow their oven for a little bit. It takes 900 seconds to bake each cookie cake. 4. Once the cookies are baked, you take it out and put it on 2 cooling racks to let each cookie cake cool for 600 seconds. 5. Once cooled, the cookies are ready to be packaged. Your friend left to catch a meeting. To set up the packaging process, you prep by spending 4 minutes cutting the plastic wrap and ribbon. Next, you spend 25 seconds packaging each cookie cake individually. Is this a supply- or demand-constrained environment? From noon until 1:00, the demand goes up to 130 per hour. Is this a supply- or demand- constrained environment? List the utilization for each step if the demand is 85 per hour and 130 per hour. (This is best done in a table.) Apply the principles of BPI to the process flow shown here. Assuming each employee receives $15 per hour, how do we meet the variability in demand? (This is a challenging question but you should feel free to move employees around as needed.) What is your new cost and capacity for one shift of operation (8 hours).
