Important aspects to consider include: equipment use, facility layout, number of seats, menu, price of menu items, cost of items, average check, average number of covers, location (and the possibility of increased occupancy costs), days and hours of operation, meal parts, prime cost. Your presentation should be 10 minutes, or less, and should present your ideas and explain your choices, defending them.
