Step 1: Confirm dietary requirements of the customer. Consult customers and colleagues and note specific information relating to special dietary requirements. Record dietary requirements of the customer Step 2: Access special dietary recipes and select specialised ingredients. Analyse the special dietary recipes; they can be found in the Student Resources. Select specialised ingredients for each customer order. Document the specialised ingredients for each dish/customer order Step 3: Identify from recipes and packaging, ingredients that may cause health consequences due to food allergies or intolerance. Document the ingredients that may cause health consequences due to food allergies or intolerance for each dish/customer. Exclude ingredients from dishes to meet customer requirements
