After several years of successful operation, the Green Grapes Winery begins to have problems with their supplier of Gewurztraminer. The grapes are coming in with a large amount of mold. To avoid issues with the associated oxidative enzymes, you decide to do a heat treatment of the juice coming out of the press pan prior to filling the tank. Since we decided to pick grapes at night and stop using our tube-in-tube heat exchanger for must chilling after the first harvest, this heat exchanger has just been sitting there doing nothing. Therefore, we plan to see if we can use this heat exchanger for the juice heat treatment. We will use condensing steam to heat the juice from 70F to 90F(prior to a short hold step and a cooling step).
