She is one of only a few Seventh-day Adventist that follow a strict vegetarian diet. She has asked her employer, No & Know, to provide more vegetarian options in the cafeteria. No & Know spoke with the food vendor and the company was advised this would cost them an additional $50,000.00 per year. As a result, they denied her request as an economic hardship and because the company believes her vegetarian diet is not a religious practice.
