a) A mathematical model of fermentation that describes the dynamics of biomass, substrate and
product with respect to time. You should indicate the relevant ethical parameters
b) Fermentation strategy
that allows you to meet the demand.
c) Design of the bioreactor including the operating volume and the rest of the dimensions (diameter of
the tank, agitator(s), etc.)
Establishing the stages of the bioprocess Based on the characteristics of the 'lactic acid and the way in
which L. casei produces it, answer the following:
a) Block diagram with the stages of the bioprocess. This must start with fermentation and include at
least 2 subsequent unit operations.
b) Justification of the selected unit operations Based on:
The biochemical characteristics of the molecule
At least a foundation of sustainability
