Blueberries contain 15% solid and 85% water. To manufacture 100kg/h of blueberries jam, crushed blueberries must be mixed with sugar in a mixer. After the mixing, the mixture is sent to an evaporator to remove the water. The blueberries jam leaves the evaporator with a composition of 65% sugar, 8% solids and 27% water. All percentages given are in mass percent.
