Stir the wine with a fast enough to create a vortex in the middle. 3. Have a second receiver vial ready for when it is time to collect the higher temperature fraction. 4. Turn the hot plate to setting 4 - 5, and wait for the temperature to climb to ~ 75 - 78 C at which point the ethanol rich fraction will start to distill over (do not heat too fast, it is much better to collect for a longer time at the lowest temp it distills than to collect quickly at a higher temp).
