The company was founded by Steve Ells in 1993 and is currently headquartered in Denver, CO. The current CEO is Brian Nichol. The company was opened with the intent to show that just because the food is served fast, does not mean that it is fast food. (1)

In recent years Chipotle has made a commitment to using only the freshest ingredients and using meat products from farms that raised animals without using antibiotics and allowing the animals a clean free range to grow. In 2013 they became the first restaurant to voluntarily advise what products contained GMOs and in 2015 fully switched to using products that contained no GMOs.
