David would need to examine the request and determine the impact it would have on the timelines and other variables of the project. The scope creep could cause major changes in the project at this point. David would have to create a change management plan and get it approved by the project sponsor to proceed.

Impacts of change:

Suppliers- Would the local suppliers have the plant-based meat substitutes required for this change or would new vendors need to be researched and acquired?

The chefs- The chefs have spent time working on the recipes and now would be asked to start again and create a new product using plant-based meat products. Would the chefs hired for this project have the knowledge required for this new recipe? It took the chefs months to come up with the recipes they created, it could take months to come up with a new recipe.

Marketing- The marketing has been working on the first product to create advertisements and promotions now they have to start over with the new product which would take more time.

All of these impacts could affect the timeline and the money involved in this project.

David should carefully examine the request and get opinions from the project team on what time and resources it would take to make this change. David should then meet with the project sponsor and the stakeholders about how this change will affect the project, including cost and timeline. He should make very clear the impact the changes will have on the project. If the project sponsor and executives accept the changes then he should proceed with making the changes to the project.

With the avocado situation, David should attempt to find a more reliable supplier of avocados that can do a better job of stabilizing the cost and quality of the product. A contract should be made which would address these issues so both parties are aware of what is acceptable and not.
