Erica is the kitchen manager that runs a large kitchen for a major Canadian University. She is responsible for all of the food orders. Every week on Friday, she goes into the Freezer and Fridge and checks the inventory on 14 different items that come from the local dairy supplier. These items include cottage cheese, sour cream, milk and ice cream and more. She checks the stock on each item and orders enough to bring each up to a pre-set level.
