The factors you listed are ones that I wish I knew about years ago when I was managing two convenient stores. I had to spend most of my time at the busier store so the only full-time employee took advantage of that and stole money and product from the store. I was unaware until inventory time when there was quite a bit of shrinkage. This did teach me a lesson, though. To not fully trust employees.
