I make my cookies using weights for all ingredients. Thus, for my chocolate chip cookies, the resulting batch comes out to 1456 grams - pretty consistently.
When I make the cookie balls, I try to hit a nominal value and stay within 5 or so grams. When I near the end, around cookie 12, if I am running low on dough, I try to spread the discrepancy between the last four. If I have dough left, eager helpers are standing by with their spoons.
Lately (on the last run) I applied a new approach where I would shoot for a nominal 89 grams and if the ball landed on the scale within 4 grams, I stopped and used it. If not, I would add or subtract a small amount to get into the range.
