You may either choose a workplace project or a home project. Some ideas: remodel/redecorate a room, move to a new apartment or house, plan a fundraising (foodraising?) event for Kirkwood students who need help with food or rent money, plan for an inventory of your workplace, plan an overseas business trip for an executive at your workplace, create and launch a new (non-profit or for-profit) business, create a marketing plan for something your workplace sells, etc.

There is free software available online to create a nice looking GANTT chartjust do a search. If you choose to use Excel for this task, you may wish to search YouTube for a tutorial on "How to use Excel to create a GANTT Chart."
