The topology I would use would be the star topology. The star topology creates very little issues and can solve them quickly because most of the time the problems are easily identifiable. The star topology is also one of the easies technologies to setup because the items that are required are minimal. The star topology also allows expansion so it becomes more futureproof. I would use cat 6 cables to be able to future proof the cabling in the network. For the core of the network I would use routers rather than switches. For the star topology "The central connection allows the network to continue functioning even if a single node or cable fails.
