The High Note is a popular Jazz and cocktail bar in South Brisbane. The venue has live Jazz music on Friday and Saturday nights and a comedy club every other Sunday between 7 and 9 pm. The venue is small, holding 115 guests at full capacity. There is a mezzanine balcony that accommodates up to 25 people and is available to pre-book for nights that have live music, or for private functions throughout the week. Table service is provided to this area by one member of staff whose duties will be to take orders and serve the guests for the duration of the evening. This service is only provided for pre-bookings.
At full capacity, the venue requires 3 bartenders (one of which will need to be a shift manager), and three front-of-house staff for serving, greeting and glass collecting. One member of door staff is required on Friday and Saturday evenings, and every other Sunday. At busy times, the combined front of house and bartending staff ratio should be 1:25. The High Note has a policy that there must always be at least two bartenders on shift so that the bar is never unattended during the service period.
In general, Friday and Saturday evenings are always at full capacity alongside every other Sunday, for the comedy club. The weekend days are usually quieter, meaning that the shift only requires 2 bartenders and two front-of-house members of staff.
The High Note only opens between 6.30 and 10.30 pm, Tuesday to Thursday, as these periods tend to be quieter. These shifts only require 2 bartenders and one front-of-house member of staff. However, the mezzanine is still available to book for private functions during these times, and if there is a booking, the roster must allocate two front-of-house staff members to allow for one to cater for the party. The bar is closed on Monday.
The High Note has a policy that full days are split into two shifts of 11.30 am to 6 pm, and 6 pm to Midnight. Only under exceptional circumstances can an individual work a full shift. There is also a policy to state that members of staff should not work 3 shifts consecutively. All shifts allow half an hour before opening and half an hour after closing to cash up and attend to cleaning duties.

When rostering the team, you must ensure:
- An appropriate skill mix within the team.
- Personal commitments and working hours are respected.

- Wages, allowances and shift times meet industrial awards and enterprise agreements.
The roster should also detail the date, time and approximate staff ratio for each service period and document the waste cost.
The combined rostering budget for the three service periods is $2315. You must effectively manage the roster so that it does not exceed this amount.
