Task 1: Transport Food Safely and Hygienically ASSESSMENT INSTRUCTIONS This task requires you to transport food from the preparation area to another location following food standards requirements. STEPS TO TAKE 1. Select at least one food item for each of the following categories of food items to be transported to another location: Dairy Dry good Eggs including raw egg food Frozen food Fruit Vegetables Meat Poultry Fin-Fish Shellfish 2. Select at least one suitable transport vehicle for each identified food item. This must be according to: Type of food item Work instructions Legislative requirements The same transport vehicle can be used for multiple food items. 3. For each transportation vehicle selected, package each food item for transport applying the following: Appropriate storage Hygienic safe food practices Linings of transport container Sealing of transport container Temperature 4. Load and restrain all food items according to organisational safe manual handling techniques. 5. Transport all food items to new location. 6.
