The pressure cooker, or "digester" as it used to be called, dates from the seventeenth century and was invented by a Frenchman named Denys Papin. Papin's initial designs didn't include any pressure-release mechanism, which resulted in various explosions early on. Fortunately, Papin subsequently invented a steam-release valve to keep such accidents from happening. In 1938, pressure cooker finally made its way into the home kitchen. A 3 litres capacity of pressure cooker has a small opening with diameter 5 mm. Initially. 2/3 of the volume of the pressure cooker is filled with heated water (saturated water) in atmospheric pressure. Water is then heated with the lid closed.
