You are the front of house manager for a 250 seat restaurant. The restaurant is open from 11:30am to 11pm. Your restaurant uses a server to guest ratio of 1:18. You are expecting a turnover ratio of 0.8 for lunch time. Lunch is served between the hours of 11:30am and 4pm. Most of the guests will be arriving between 12pm and 1pm. On average, guests stay for 45 mins to 1 hour at lunchtime.

Dinner is served from 4pm until close. You are expecting a turnover of 2 times between 5pm and 10pm and a turnover of 0.1 between 10pm and closing. As a security measure, at least 2 servers must work until close.

In total you have 19 staff available for the day. 2 of the staff members are only available to work during lunchtime and 1 is not available at all today.
