1. Create a menu of a restaurant and develop a marketing plan that addresses the 4Ps of marketing a restaurant.

Use skills developed in Chapter 5 to address the following issues.

Describe one activity that you plan to develop for each of the 4 Ps that will help to support and increase sales in the first months of the business.

2. Design a basic menu that will match the concept of your business. You are NOT required to create a recipe for these items. Simply research and include menu items suggestions that will match your concept.

Please include the following items

2 appetizer items

1 salad

1 soup

4 entre items

1 dessert item

3. Calculating the cost of menu items from your favorite restaurant

Choose 1 item from your menu item to develop a food cost strategy

Using your one selected menu item do some online research to find a recipe for this dish.

o List all of the ingredients used to make the dish, and the quantities required for each ingredient

Calculate the cost of all of the ingredients to produce the dish

Provide the reader with a total cost to produce the menu item

Using the knowledge learned in class tell the reader how much you will charge for this menu item. Explain your decision using material learned and class and online research

4. Analyze a menu and determine what type of equipment is needed to cook all of the dishes. Research and determine the cost of all required kitchen equipment.

Analyze all of your menu items and conduct research to determine what type of cooking equipment is/are used to cook each item on your menu.

Once you have determined all of the cooking equipment required, please conduct research and inform the reader how much it will cost to purchase each menu item, and what the total cost will be.

Discuss what considerations owners/chefs need to make when making restaurant cooking equipment purchasing decisions
