Emergency situations can occur in any business, it is important to have policies and procedures in place and to regularly practice them so that when an emergency occurs people will know what to do.

As a part of your assessment you will be following organisational procedures in the following role plays.

Emergency Situation 1

Following emergency evacuation procedures students are to conduct a fire drill where you will need to leave kitchens 1, 2 or 3 in a safe and secure manner and meet at the pre-designated assembly area and complete any organisational procedures as required.

Following the fire drill students will need to fill out a fire and evacuation record.

During the Fire Drill your trainer will monitor the evacuation process.

Emergency situation 2

You are working in a restaurant and it is the end of the evening, all the customers have left the building and only four staff members are still working. At 11:00 Pm the staff hear a loud bang at the back door and are confronted by an armed robber. What Do You Do???

Students in groups of 3 or 4 are to simulate and follow emergency procedures in the case of an armed robbery.
