Note that the lamp acts as infinite resistance until it gets to the turn on voltage, at which point the electric field is strong enough to break down the neon (rip off electrons) and turn it into a conductor, i.e., +neon ions release yellow-orange photons (the bulb glows) when they are reunited with electrons (just like the demo shown in class)
