Choose a commodity from the options below that you will produce, process or both. Options for Canadian Commodities include: Fruits, Vegetables, Dairy, Pigs, Beef,Sheep and answer the following questions. 1-Describe the location your production or processing will take place. Demonstrate what your operation looks like by providing a map/schematic etc. 2-Outline in detail the GMPs/GAPs that you will put in place in your operation and how they will be implemented and verified. You should include three processes or procedures from each GMP or GAP and explain how you or your staff will implement and verify the procedure. 3-Define at least one HACCP Critical Control Point of your operation, deviations from this CP and the CP monitoring program you will have in place. 4-Outline at least one aspect of a Traceability Program you will have in place and how you will accomplish it. 5-Consider if Biosecurity is an issue with your commodity and describe one process you will have in place to guard against Biosecurity threats
