Guests Hotel Inc. is located downtown in your city. Guests Hotel is a boutique hotel with 100 rooms, a restaurant, a lounge bar, and a convention center. The rooms department is doing quite well with an average occupancy rate of 80% all year. It has been in business for 15 years.

They also bring other parties to have their meals there.
The general manager is going to retire soon, and the hotel is looking for someone to replace this position. The new GM must have knowledge and working experience with Rooms and Food and Beverage. It is imperative for the hotel to keep its reputation for great food. The Food and Beverage Department brings to the hotel more than 30% of its total revenue. The Food and Beverage Department purchases everything locally, and vendors bring all products to the hotel. If needed, the hotel outsources all transportation services, and vendors pay for transportation costs. The owner of the hotel does not like to have vehicles owned by the hotel. It is well known by management that F & B is a contributing factor for guests booking rooms and events at the hotel.
You have been recommended for this job opportunity. After an initial interview and as a candidate for this prestigious position, you are required to demonstrate in a test your knowledge of how to manage the Food and Beverage Department without compromising food quality and service.
