In Chapter 8-Restaurant Revenue Management,we learn the importance of maximizing revenue in a more non-traditional revenue management industry. Legoherel et al. (2013) offer several suggestions on how to generate additional revenue to assist with a restaurant's bottom line. In addition we are introduced to the concept of RevPASH (revenue per available seat hour). This concept is further explained in full in the video titled, RevPASH: Revenue per Available Seat Hour (Profitable Hospitality, 2008).
