Le Gourmand Ltd is a well-established Mauritian Restaurant located in the center of Rose Hill. It usually opens from 11.30 to 14.30 for Lunch and from 18.30 to 21.30 for dinner and remains closed every Thursday. The restaurant serves Chinese and European food at a moderate price and the target market is the middle-income people residing in the lower Plaines Wilhems. Le Gourmand Ltd currently employs 3 cooks, one bartender, five waiters, two cleaners, two dishwashers, one restaurant hostess, one cashier, one accounting officer, and one Food and Beverage Manager. There is also the owner of this one man’s company who acts as managing director and he draws a monthly salary, like every other
employee.
The restaurant normally operates with 10 tables accommodating six people each, 6 tables accommodating 4 people each, and three tables accommodating two people each. With the lockdown due to COVID 19, the restaurant has been closed for two months, and yet it has had to pay a rent of Rs40 000 per month and reimburse a loan at Rs50 000 per month. During the same period, it has also been paying its employees their wages. Such payments have almost completely drained its reserves. The turnover used to be Rs8 000 000 per year with a net profit of Rs600 000 and these are
expected to fall dramatically this year.
As per government policy, it will be possible to restart operations eight weeks from now but the business will have to implement social distancing and reinforce cleanliness, and hygiene standards. The management team is feeling very discouraged and has hired your services as a business consultant
to tell them the way forward.
Your terms of reference as a consultant are as follows:
• To evaluate Le Gourmand’s business situation and to recommend revised strategies and tactics so as to allow the firm relaunch its activities.
• To outline an implementation plan of the proposed recommendations.
