The rheology of the broth is investigated in a cup-and-bob viscometer. Two samples have been withdrawn at 2.5 and 10 hours after inoculation and the following shear rate/shear stress data were obtained in the viscometer: a) Calculate the rheological parameters for both samples and determine the type of fluid behaviour. [10 marks] b) Compare the results obtained for the two samples and discuss any changes in the process that might have influenced the fluid behaviour
