Problem: An experiment is being carried out in a laboratory on the feasibility of industrial drying of a certain food product. From this experimentation, drying data were obtained with a tray dryer and air flow over the exposed upper surface (see data in the annex table). The drying area is 0.1m2 and the mass of the dry solid is 3kg. The humidity of the gas used for drying is 0.015kgkg of dry air. With the above information:
A) Make a graph of mass of wet solid (in kg) versus time (in h)
b) Make a graph of free moisture X (in kg water ?kg dry solid) versus time (in h)
c) Measuring the slopes, calculate the drying rates R(in kg water ?h*m2), and plot R versus x.
d) Calculate Xc (in kg water ?kg dry solid and the drying rate Rc(in kg water ?hm2), for the constant velocity region.
e) From your graphs above, obtain an algebraic relationship between the drying rate R(in kg water ?hm2) and the free moisture (in kg water ?kg dry solid) in the decreasing rate section. f) If said solid must be dried from a humidity of 25% to 3% on a wet basis (mass of water/total mass) under the same drying conditions of the experiment, determine the total drying time.
