Worksheet Counting Days

I need help to know the limitation period for each action:

Do I have to include Saturdays and Sundays? If the last day is a Holiday, Saturday or Sunday, do I have to jump the date to the following business day?

Where can I find all this information? I looked into "The Provincial Offences Act" and "The Highway Traffic Act", and also I searched the "Court of Justice Act", and I did not find any Rule/Regulation on counting days.

- Serve the Offence Notice

- File the Certificate of Offence

- Defendant to make a choice

- Request to the court to reschedule an early resolution meeting

For example:

1. If the offence was committed on the 1st, when is the last day to serve an Offence Notice?

2. If the offence was committed on the 17th, when is the last day for service of a Parking Infraction Violation Notice?

3. If an Offence Notice was served on the Defendant on the 4th, and the 23rd is a holiday, by which date must the Provincial Offences officer file it with the court?

4. If an Offence Notice was served on the Defendant on the 6th, and the 23rd is a holiday, by which date must the Defendant make a choice; for example, pay the fine, request to trial, or meet with the prosecutor?

5. The court must receive notice of a request to reschedule an early resolution meeting at least two days prior to the meeting date. If the meeting is scheduled for the 16th, and the 23rd is a holiday when the request must be made?

Please let me know the Rule for counting days within the Ontario Provincial Offences Act and The Highway Traffic Act.
