Purpose: Review each case study and identify food safety errors and strategies (strategy for each error) to prevent food borne illnesses.

  1. You decide to have some friends over for dinner. Baked chicken, rice, salad and brownies are on the menu. You realize in the morning that the chicken breasts are still in the freezer, you throw them on the counter to defrost before you leave for work. When you return home in the afternoon the chicken is defrosted. You start to prep dinner, cutting the raw chicken in half on a cutting board. Guests are arriving soon, so you quickly wipe the cutting board with a paper towel and chop up vegetables for your salad. The timer rings and you pull the chicken out of the oven and cut one piece of chicken to make sure it is cooked. While the chicken was cooking you make some brownies, pouring the brownie mix in a bowl, adding oil, water and one raw egg. You scoop the brownie batter into a baking pan and lick the spoon before throwing the brownie pan in the oven.

  1. You have friends over to watch the UB basketball teams play in the MAC tournament. You order a sheet pizza, wings and make some chili dip. To make the chili dip you buy a can of chili and will add some cheese and sour cream to it. When you open the can of chili you notice that it is dented and seems to be punctured. You open the can and smell the chili, it smells fine so you add it to the cheese and sour cream. A few friends can't make it and you end up with lots of leftovers. Your friends leave late and you are tired and do not feel like cleaning up. You throw some paper towels over the food and leave it on the table. The next morning you think to yourself "pizza for breakfast" and have a slice. You notice after eating a fly is sitting on the leftover pizza.

  1. You work in the north campus school cafeteria. You wake up for your morning shift and are not feeling well, however you go to work knowing that they are short staff already. During your shift your task is to portion ground beef into 3 ounce patties. You go the refrigerator and notice it is open and has probably been open all night. You grab the ground beef and uncover it and sneeze carrying it back to your work station. You portion the beef patties and return them to the refrigerator. When you walk into the refrigerator you notice the temperature reads 50 degrees. You leave for class and forget to talk to your supervisor about the temperature of the refrigerator.
