Evaporation to produce solid sugar crystals from sugar cane is one of the oldest continuous processes. Raw sugar cane juice is sent to 3 evaporators in series to remove water. The juice, which is 85 wt % water, is fed to the first evaporator at 10,000 lb/hr. Equal amounts of water are removed as vapour in each of the 3 evaporators. All the sugar, and some of the water remains in the liquid phase leaving each evaporator. The liquid gets progressively more concentrated (in juice) as it progresses through the each evaporator. The concentrated juice leaving the last evaporator is 40% water by mass. a) Draw a Block Flow Diagram and number your streams. If you have trouble visualizing the process, "Google" it. b) Setting a control volume (boundaries) around the whole process, develop equations to describe the overall material balance, and the balances on sugar and water. (As always, state your assumptions) c) Find the flowrate of concentrated sugar juice leaving the last evaporator. d) Find the total mass flow rate of water removed from the sugar juice e) Find the flowrate of the water streams leaving each of the 3 evaporators. f) What is the composition of water in the juice fed to the 2nd evaporator?
