Students are asked to conduct an analysis of their personal water use, submit a plan for a 15-25% reduction in use, test the reduction plan for a few days, and then reflect on their experience and its practicality.

There are various water footprint calculators available online. I have posted links to four of them in the documents section. Some ask for a state, so just use New York. You could try comparing a few. it is a 2 to 3 pages of written analysis plus discussion.

You can also include a printout of the water footprint before and after.

Consider lifestyle and virtual water as well as actual water use. Lifestyle would include diet, travel, consumer habits, recycling, etc.
