The crucial advantage of Rolling Dough Bakery is that it establishes a solid foundation in a company's activities. As a result, Rolling Dough Bakery is investigating the As-Is process in order to evaluate the current condition of its operations and discover potential for improvement; this process is demonstrated in Figure 1. Due to the wide variety of products in the bakery, exact methods are not possible to solve the scheduling problem, at least not in a sufficient amount of time prior to the start of production (The basics of documenting and analyzing your as-is process, n.d.). Rolling Dough Bakery is having a hard time completing new orders due to the bakery having two employees. Currently, the bakery can only receive orders that have been received and paid the day before. For that reason, the bakery is not able to expand its production, and most of the time, is losing their customers
