This study uses data from a survey that was designed to measure consumer behavior with regard to food purchasing, preparation, cold storage and disposal/waste. Design and implementation of the online survey was performed using Qualtrics software. Recruits were taken from lists of consumers who have previously agreed to consider taking surveys offered on Qualtrics via computer or smartphone. Recruits were asked to consider taking a survey being conducted to "...to understand the purchase, storage, use and discard of food by U.S. consumers and how this may have changed due to COVID-19." Respondents were then told they would have to participate in a sequence of two surveys, where the first survey would take about 5 minutes and the second survey, which would arrive a week after completing the first survey, would take from 10 to 15 minutes and that they would earn from $2.40 to $3.20, where the amount varied according to elements considered by Qualtrics' proprietary compensation scheme. Inclusion criteria included that recruits (a) prepare half or more of the meals for their household and (b) were 18 years of age or older. The survey was approved by the local Institutional Review Board. All respondents provided informed consent. The survey targeted adults from across the continental United States and was offered to lists of recruits interested in participating in surveys of all types maintained by vendors affiliated with Qualtrics. Respondents participated in a baseline survey and were invited to participate in a follow-up survey approximately one week later.
