1. In talking with some food truck owners in the past, you know that hiring a professional to do the whole job is a possibility. 

2. You could pull together a team to completely re-fit the van without professional help. 

3. And finally, there is the option of stripping the interior on your own, then having a professional install the specialized kitchen equipment. The first option (professional) would be the easiest choice with the least inconvenience. A few quick calls let you know that this option would cost $55,000. The second option of running the total re-fit yourself has the least cost at $28, 000, but you are concerned about timelines and imposing on your friends to do the work. 

The third option (prepping for the professional installation by yourself) may be difficult to coordinate with the pros and would come in at $35,000. You take the options to Miranda and settle on Option 3. Miranda decides that paying for the professionals to clean out the van before they install the kitchen is not worth the extra cost, but we need to ensure that the equipment is installed properly. You will prepare the van to be fitted with new equipment by a professional. The manager of the local junkyard, Mahendra S Dhoni, has asked to be part of the demo so that he can keep the scrap. You agree, since Mahendra will provide the staff at no cost in exchange for the scrap, that you will provide lunch to his crew. You already have a connection at the catering company, Mobile Delights. Mahendra is happy with this mutually beneficial agreement. You will need to rent a double garage for the demolition. You find a garage to rent from Toni D’Amello. She is generally agreeable, but insists on a clean garage, and has indicated that she will cancel the agreement if she finds a mess. You make a mental note to ask the wrecking crew to keep things tidy. Communication with the professional installers, Kitchen Love, is important to ensure that they are ready for the van once it has been stripped. You remind yourself to provide them with regular updates on your progress. You also need to buy supplies, create the menus, and get a Refreshment Truck Licence. After some planning, you decide on a four-week schedule with the van being ready for the Summer festival season at the end of week four. The first two weeks will be spent working in the garage, and you will hand the van to the professionals in week three. Today is Monday, May 4, 2020 – and you plan to hit the road on Friday, May 29, 2020. You budget $2,000 for several specialized tools that will be needed to start the job.
