You have been randomly assigned a well-known and easily researched dish.

Your job is to pair that dish with two wines of your choosing. Your intended dinner is me, and I like almost every type of food and have a wide palate for wines so be as adventurous as you wish.

Your budget for the two wines is $75 which you can split up however you like. Retail prices in the LCBO and winery retail shops are to be used. If you prefer to research through a private importer you may use license prices as your cost.

Your presentation can be as creative as you want. You must emphasize the reasons for the pairings based on the principles from our wine and food pairing lecture. Your wine tasting notes should be centered around our deductive tasting format and less around online tasting notes.

Think about Compare and Contrast; think about regional and traditional food and wine cultures; think about the dishes ingredients and particularly the areas of salt/acid/sweetness/umami. You may add complimentary side dishes to your assigned dish if you wish or you feel it will serve to emphasize your pairing in some way.
