Enzymatic elimination of glucose process has been a method of using glucose oxidase to oxidize glucose (C6H12O6) in egg liquid to gluconic acid (C6H12O7) to eliminate sugar content. This process also helps to remove eggy smell, improve the gel, reduce viscosity, and foaming properties once the emulsification properties have not been changed basically. The reaction is given as follows: C6H12O6+O2+H2OC6H12O7+H2O2 As shown in Figure, one of the inlet streams (egg mixture) which contains 4wt% glucose, 16 wt% water and the balance unreactive egg solids is fed to the reactor at a rate of 2400kg per hour. Air is also pumped through the enzyme reactor. In this air stream, 20kg/h oxygen is found. The desired glucose level in the egg product leaving the reactor is 0.4wt%.
