PURPOSE - The purpose of this assignment is to create an ORIGINAL Beverage Menu for The Local Restaurant at Centennial College: https://thelocalrestaurant.ca/

PREPARE - Take some time to review the modules you have already covered in HOSP122; you have already learned a lot about menus, wine, beer and spirits. Also make sure to review the CURRENT Beverage Menu at The Local so you can create something different and unique.

While creating this menu, consider who your target market is; it will be the guests of The Local Restaurant, and will include students, staff, faculty and local community members.

MENU ITEMS - Your menu must include the following options:

  1. Coffee and/or Tea - MINIMUM TWO (2)
  2. Water MINIMUM ONE (1)
  3. Craft Soda - MINIMUM ONE (1)
  4. Juice and/or Healthy Beverage Option MINIMUM THREE (3)
  5. Mocktail - MINIMUM ONE (1)
  6. Cocktail - MINIMUM TWO (2)
  7. Wine: White/Red/Pink/Orange MINIMUM TWO (2) TOTAL
  8. Wine: Sparkling & Dessert MINIMUM ONE (1) EACH
  9. Craft Beer MINIMUM TWO (2)
  10. Cider, Sake, Beer Cocktails, Coolers, Spritzers - MINIMUM TWO (2) TOTAL

ASSIGNMENT DETAILS

  1. Within all of your menu items, ONE (1) beverage choice must come from your home country.
  2. You do not need to include prices on this menu.
  3. Consider using creative descriptions to sell your menu options.
  4. You have creative freedom in terms of layout, colour, style and font. Create what you think would be appealing to the guests of The Local.

ASSIGNMENT PART II Once your menu has been submitted, you will be responsible for explaining your choices. Your professor will review your assignment and then send you a message asking specific questions about your menu.

You will be expected to rationalize (explain) some of your choices. Your answers should reveal your knowledge of beverages and understanding of beverage design.
