It is desired to operate a small industrial plant that produces guava juice. The composition of fresh guava can be simplified as an equal mixture of three components (water, seeds and sugars). The feed is blended with enough water to obtain a homogeneous mixture, maintaining a 1:2 ratio. This current passes to a filtration stage, where a current containing 5% sugars, 10% water and the rest of all the seeds is discarded, and the guava water that passes to a final stage of evaporation at low temperature to avoid loss of smells and flavors. This juice must have a composition of 40% sugar.
